Maple-Pecan Duet Energy Balls
I love energy balls. I particularly love these because, as well as fulfilling my craving for sweets, there's the saltiness of the peanut butter and the crunchiness of the granola.
These are ridiculously easy to make. The most time consuming part is cleaning the food processor at the end.
INGREDIENTS
- 100ml pitted organic dates
- 1 tsp honey
- 1 tsp organic Cocoa powder
- 2 heaping tbsp natural Peanut Butter
- 100g Maple-Pecan Duet granola
DIRECTIONS:
Soak the dates in water for around 10 minutes. Drain the dates and put them in a food processor along with the honey, peanut butter, and cocoa. Blend thoroughly. If the mixture is too solid to purée, add a few drops of water. Once the mixture is smooth, add the Maple-Pecan Duet granola and blend briefly. The granola adds a delightful crunchy texture so you don’t want to blend it too much.
Scoop the mixture into a bowl. With clean, wet hands, roll a spoonful into compact balls. This mixture should make approximately 9 bite-sized energy balls. Refrigerate until solid. Store in a sealed container in the fridge.
